Summer is almost here, and the grill is officially out from hiding. We have just the perfect grilling recipe that we know you will love.

I am always on the lookout for new grilling recipes, because I feel like I fall into the same routine of only preparing the same marinades.

I decided it was time to spice things up and came across a similar recipe, for Chipotle Lime Chicken. I took mine a few steps ahead, and grilled it, and added a few ingredients that I thought would be delicious.

And trust me, this chicken is delicious.

This Chipotle Lime Chicken is so easy to make, and you probably already have most all the ingredients. Such a healthy meal, with hardly any preparation. So fire up that grill and try this chicken that will change your life.

It’s full of protein, and comes together in a matter of minutes.

The key to grilling juicy chicken

Grilling chicken can be tricky. I don’t think there is anyone more scared of getting food poisoning than me. When I grill the chicken at our house, it is grilled to a crisp, and needs a lot of sauce.

My husband taught me two words that have stuck with me through the years. They are “low and slow”.

When you are grilling chicken, cook it on low, and let them cook with time. Even if it takes an extra 7 minutes, it will be worth it for juicy and tender chicken.

I also recommend investing in a food thermometer, they are only a few dollars, and when the middle of your chicken reaches 165 degrees, you know the chicken is done and juicy.

Ingredients

  • 4 boneless skinless chicken breasts
  • 2 Tablespoons olive oil
  • ½ cup lime juice
  • ¼ cup soy sauce
  • ¼ cup fresh cilantro chopped
  • 2 teaspoons chipotle chili powder
  • 2 teaspoons minced garlic
  • 3 Tablespoons honey
  • ½ teaspoon salt
  • 2 limes

Instructions

  • In a medium size bowl, mix together the olive oil, lime juice, soy sauce, cilantro, chipotle chili powder, minced garlic, honey, and salt until well combined.

  • Set about 1/2 cup of the marinade aside.

  • Place the chicken breasts in the marinade and let soak for about 2-6 hours in the refrigerator.

  • Heat grill to medium-high heat, and place chicken on.

  • Baste grilling chicken with the half cup of marinade that was set aside.

  • Grill until the chicken is done all the way through, and the outsides are dark golden brown.

  • Serve with fresh limes, and enjoy

    Haven't tried this recipe but sounds good. My comment is in the list of ingredients it say 2 lemons for garnish and extra zest but at the end of directions it states "serve with fresh lime and enjoy". Which is it -lemon or lime?

    I sure it was a typo and it meant limes (Hence: the name of the recipe) but use your imagination. Use what you prefer or have on hand, you don't have be precise in a recipe like this.
