Focaccia is an Italian flatbread, similar to apizza that is topped with a variety of ingredients and cut into sticks, squares or rectangles.

The flavor and texture for this appetizer comefrom a generous dousing of olive oil before and after it is baked.

Yesterday I was shopping in the supermarket and noticed a package that contained beautiful cherry tomatoes in a variety of flavors. Instantly, I knew they were going to top my focaccia.

The rosemary gives it a nice flavor and a delightful aroma.

If you’re a novice baker or have never used yeast before, this focaccia recipe is a great way to start. The dough only requires 5 easy ingredients, flour, water, salt, yeast and olive oil.

And it only requires one rise. So there’s no way to mess this one up since the dough is so forgiving.

Keep in mind that you can top it with any other ingredient you may like: cheese, veggies, fruit, arugula, nuts, etc. It’s a great way to vary your focaccia recipe by season. You can even use this dough for pizza.

You can also make a dessert one by reducing the amount of salt and adding fruit spread on top.

The way to serve focacciais to cut them into sticks and have your guest dip in olive oil, marinara sauce or even as a flavored bread to serve with pasta.

You can even make a focaccia sandwich with some mozzarella and charcuterie in the middle. Yum.

Ingredients

For Focaccia Dough

  • 2 1/2cupsBread Flouryou may use all-purpose flour
  • 1teaspooninstant yeast
  • 3tablespoonsOlive Oil
  • 1cupof waterat room temperature
  • 1teaspoonsalt

For Topping

  • 2tablespoonsOlive Oil
  • 6ozof cherry tomatoesin all colors
  • Springs of fresh rosemary
  • Salt
  • Pepper

Instructions

For Focaccia Dough

  1. In a mixer fitted with a dough hook place the flour, yeast and salt together

  2. Add the olive oil and water

  3. Mix using the dough hook on medium speed until the dough is elastic and soft. About 6-7 minutes

  4. Remove dough from mixer and place in an oiled bowl

  5. Cover bowl with plastic wrapping paper and a damp tea towel

  6. Heat a cup of water in the microwave until it starts boiling

  7. Open the microwave door, move the cup of water to the back and place the bowl with the dough in the middle

  8. Close the microwave door and let the dough proof for 20 minutes (dough should double its size). DO NOT TURN ON THE MICROWAVE - this is my quick magic method for bread proofing

  9. Preheat oven to 425 degrees Fahrenheit

  10. After 20 minutes remove the dough from the microwave and place it on a sheet pan lined with parchment paper

  11. With your hands shape the dough into a square

  12. Make indentations all over the rectangle using your thumb or the back of a spoon

  13. Generously brush olive oil all over the focaccia. Don't be stingy!

  14. Press the tomatoes inside the indentations of the dough

  15. Sprinkle the rosemary

  16. Add salt and pepper

  17. Bake for 15-20 minutes or until golden

  18. Remove from oven, cut into your desired shape and serve

  19. Enjoy!
