A rich, savoury tomato mushroom stew with roasted summer tomatoes and fragrant mushrooms. This vegetarian soup recipe is inspired by the tomato mushroom stew from Zelda Tears of the Kingdom.

This soup is just delicious! It’s really creamy and carries a deep rich flavour from the roasted tomatoes. The mushrooms being panfried beforehand also adds the perfect earthiness and the caramelized onions give it just a touch of sweetness. Of course, the star is the fresh basil. Fresh herbs just make everything better! The creamy coconut milk and parmesan don’t hurt either.

You can also use fresh, canned or roasted tomatoes for this dish, depending on how much time you have available and the ingredients you have on hand. Roasting will add depth to the flavour of the stew, but sometimes you just need a quick meal, and canned plum tomatoes are perfect for that.

In Zelda Tears of the Kingdom, tomato mushroom stew is described as being healthy and rich in fiber, and I daresay I would agree. I feel like the definition of “a healthy food” probably varies from person to person, but I guess for Link’s purposes, this is definitely one of his healthier options. I can’t imagine the stomachache your average Hylian must have after eating some of the dishes Link can learn to cook, but then again, I guess the worst dish – dubious food – is a miserable experience for everyone.

To make tomato mushroom stew in Zelda Tears of the Kingdom just combine Hylian tomatoes with a mushroom, fresh milk and goat’s butter. To increase the number of hearts offered by your meal, add 1 additional mushroom or tomato.

This dish uses fairly simple ingredients, so you can make it pretty early on in the game, just about as soon as you make it to Hateno or Rito Village and can purchase goat butter. Goat butter can apparently also be bought from one of the traveling merchants near Lookout Landing, which might be even easier, potentially.

You can also add elemental effects to this recipe depending on the type of mushroom you choose to add. For instance, adding a brightcap will give you a bright tomato mushroom stew that allows you to glow for a limited time, whereas adding an ironshroom will render a tough mushroom tomato stew, increasing your defence momentarily. Lots of possibilities here.

Of course, to get a super substantial meal with some added yellow bonus hearts, add a hearty truffle when selecting the ingredients for your dish. Adding a hearty radish as the 5th ingredient will also add some yellow hearts to your meal.

You can also add other items to the tomato mushroom stew for the 5th ingredient spot, such as golden apples or swift carrots, but keep in mind that combining some ingredients together may result in an entirely different recipe – but still likely a helpful meal nonetheless!

Tomato Mushroom Stew

This delicious tomato mushroom stew recipe makes 4-6 servings. Including roasting time, it’s ready to eat in 2 and a half hours.

To reduce the cooking time to less than 1 hour, skip roasting the tomatoes – just simmer them for an extra 20 minutes in the soup instead. Enjoy!

Ingredients

  • 4-6 cups fresh heirloom, Roma, or plum tomatoes, cut into wedges or thick slices
  • 2 ½ cups sliced mushrooms
  • 1 cup diced onion
  • 2 tbsp oil
  • 2 tbsp butter
  • 2 tbsp flour
  • 1 ½ cups coconut milk
  • 5 cups chicken or vegetable broth
  • ¼ cup minced garlic
  • ¼ tsp salt
  • ¼ tsp ground pepper
  • 1 cup fresh parsley
  • 1 ½ cups grated parmesan cheese
  • 1 cup fresh basil

Instructions

1. Preheat the oven to 375°F.

2. Clean the tomatoes, then cut them into wedges or slices. Place them in a foil-lined baking dish.

3. Roast the tomatoes for about 90 minutes at 375˚F, or until soft and slightly browned.

4. When the tomatoes have about 15 minutes of roasting time left, start preparing the stew. Add the mushrooms to your soup pot with 1 tbsp oil. Sauté over medium-high heat for 10-15 minutes. Transfer the mushrooms to a plate (or just throw them in the pan with the roasted tomatoes.

5. Add the onions to the soup pot with 1 tbsp oil. Cook until caramelized, about 5 minutes. Push the onions to one side of the pan.

6. Reduce the heat to medium-low and add the butter and flour to the pan. Mix well for about 30 seconds, then slowly add the coconut milk, stirring constantly.

7. Add the broth and mix well. Bring the stew base to a boil over high heat.

8. Add the roasted tomatoes, mushrooms, garlic, salt and pepper to the soup. Simmer over medium heat for 10 minutes. *If you skip roasting the tomatoes beforehand, do simmer the soup in this step for 20 extra minutes.

9. Reduce the heat to low and stir in the chopped fresh parsley and grated parmesan.

10. Remove the stew from the heat. Serve topped with fresh chopped or whole basil leaves.

This soup is just scrumptious, and so thick and creamy!

Quicker Stew

You can shorten the cooking time drastically by just using fresh tomatoes (or canned ones) and not roasting the tomatoes first.

Same goes for the mushrooms – just throw them in without panfrying to save time, if needed.

The one thing in this recipe I really recommend not skipping if possible, is the fresh basil. It just infuses the whole dish with the perfect flavour.
