Fragrant Sautéed Mushrooms (2024)

Flavourful fragrant mushrooms topped with fresh herbs and a special Goron spice mix. Inspired by the fragrant mushroom sauté recipe from Zelda Tears of the Kingdom and Breath of the Wild. These sautéed mushrooms are a quick, easy side dish for any dinner!

Okay, these mushrooms are just delicious. I could eat a whole plate of them. My partner doesn’t even like mushrooms and he loved them.

These sautéed mushrooms are pan fried until they are well-seared, plus they’re coated in a special spice mix – my recreation of Goron spice from Zelda Tears of the Kingdom and Breath of the Wild. The Goron spice adds so much depth to flavour the mushrooms, with notes that are both spicy and sweet.

You can also check out my recipe for Goron spice here. This makes enough to fill a whole spice jar! I literally put this on everything all the time now, it’s so tasty. I’ve tried it on chicken, pork, tofu, seitan, tempeh, scrambled eggs, roasted and panfried vegetables, and mixed into rice. It blends so well with just about any dish – I’m honestly surprised I haven’t found a dish yet it doesn’t work super well with. I mean, obviously I’m not sprinkling it over my ice cream or anything… wait, should I be doing that?

This recipe is also really quick to throw together, which is great when you’re looking for a super simple dinner. Just pair these with some protein and rice and you’ve got a meal! They also mix well into other dishes, if you have leftovers. I threw some leftovers I had into a quick tomato sauce for some pasta and they worked just brilliantly. I think they would also mix in well with a curry or soup, no problem.

These are also great because you can make them as milk or spicy as you want, depending on how much cayenne pepper you add. For some extra zing, you could also top them with some fresh chopped jalapeño peppers (you could also sauté them all together too!).

Red pepper flakes would also work well with these mushrooms, as would a whole heaping pile of sautéed ginger or freshly roasted garlic. Ugh, now I’m hungry. Give some of these spice combos a try!

Fragrant Sautéed Mushrooms

These sweet and spicy mushrooms are easy to whip up in just half an hour! This recipe makes about 4 servings.

Ingredients

  • 1 lb (5-6 cups) mushrooms, sliced – about 12 average size mushrooms
  • 2-4 tbsp oil
  • 1 tbsp nutritional yeast
  • ½ tbsp brown sugar
  • ½ tbsp paprika
  • ½ tbsp tomato powder (or substitute 1 tsp coriander)
  • 1 tsp curry powder
  • ½ tsp ground cumin
  • ½ tsp garlic powder
  • ½ tsp onion powder
  • ¼ tsp Himalayan pink salt
  • ¼ tsp ground pepper
  • ¼ -½ tsp cayenne /chili powder
  • 1 tsp lemon zest
  • ¼ cup fresh parsley, chopped
  • ¼ cup fresh chives, chopped

Instructions

  1. Clean and slice the mushrooms. Don’t make the slices too thick.
  2. Mix the nutritional yeast, sugar, spices and lemon zest in a bowl, then set aside.
  3. Heat 1 tbsp of oil in a frying pan over medium high heat.
  4. Once the oil is hot and shiny, add about a quarter of the mushrooms. They should be spaced out and not too close to each other.
  5. Sprinkle the spice mix over the mushrooms. Let them pan fry for about 2 minutes.
  6. Flip the mushrooms over and add more spice mix. Let the cook another 2-3 minutes.
  7. Flip the mushrooms a third time, just to sear the spice into them for another 1-2 minutes, then transfer them to a serving plate.
  8. Repeat this cooking process with the rest of the mushrooms, cooking them in batches so they can be properly spaced out in the pan. I cooked mine in about 4 batches. Add more oil as needed throughout the cooking process.
  9. Just before serving, throw all the mushrooms back in the pan for 2-3 minutes to heat them evenly again, then transfer back to the serving plate.
  10. Top with freshly chopped herbs and enjoy!

Spicy, Sweet Mushrooms, Full of Flavour

Fragrant mushroom sauté is one of the easier dishes to make in Zelda Tears of the Kingdom and Breath of the Wild, as soon as you’ve reached Goron City – all you need are mushrooms and Goron spice!

You can find Goron Spice for sale at the general store in Goron City, and mushrooms are absolutely everywhere.

Apparently there is also a traveling merchant named Yammo who possibly sells it near the Tabantha bridge stable in Breath of the Wild, though I’m not sure if this carried over to Tears of the Kingdom.
